Chicken Salad with Mango
Ingredients
3 cups rotisserie chicken meat chopped chilled
1/2 cup light mayonnaise (can use part plain yogurt)
3 tbsp. mango chutney
3 tbsp. red onion minced
2 ribs celery chopped
1-1/4 tsp. curry powder
Directions
Prep time: 15 minutes

Stir together all ingredients in a medium bowl. Serve over mixed greens or in pita bread lined with lettuce.

Makes 4 servings.
