Cranberry Quinoa Salad
Cranberry Quinoa Salad
Ingredients
1 cup quinoa
2 cups water
1/2 cup Annie’s Naturals Organic Red Wine and Olive Oil Vinaigrette
1/3 cup dried cranberries (bulk bin #608)
1/3 cup walnuts (bulk bin #651) toasted
1/4 cup organic green onions sliced
1 tbsp. grated orange zest
Directions
Prep time: 15 minutes
Cook time: 10 minutes
Chill time: at least 1 hour

Rinse quinoa well in a strainer until water runs clear. Place in a small saucepan with water; bring to a boil. Reduce heat and simmer, covered, for 10 to 15 minutes or until all of the liquid has been absorbed. Let cool, then toss with remaining ingredients. Cover and chill for at least 1 hour.

Makes 6 servings.

This ia a wonderful recipe. We have been making it since we saw it in Something Extra. It's my husband's favorite and it's healthy (didn't tell him that part!).
