Mariani Macaroons
1 (6- oz.) package Raley's Slivered Almonds
1 cup sweetened, shredded coconut divided
1/3 cup sugar
1 tsp. almond extract
1 egg
1/4 cup each: Mariani Dried Mediterranean Apricots, Dried Cherries, and Dried Wild Blueberries

Prep: 20 minutes, Cook: 15 minutes, Makes: 18 cookies

1. Preheat oven to 350°F and line a large baking sheet with parchment paper.

2. Place almonds in a food processor and process until very finely ground. Stir in 1/4 cup coconut, sugar, extract and egg. Chop apricots and add to dough with cherries and blueberries.

3. Drop tablespoons of dough into a medium bowl with remaining coconut; roll to coat all surfaces. Place on baking sheet and bake for 15 minutes. Let cool completely before storing in an airtight container.
