Caribbean Mango Stuffed Turkey Breast

Caribbean Mango Stuffed Turkey Breast
Ingredients
1 whole turkey breast, bones removed
1 tbsp. Caribbean jerk seasoning
1 tsp. garlic salt
kitchen twine

Mango Stuffing:
1 large ripe mango, peeled, pitted and cut into 1/4-inch dice
1/2 cup diced dried plums
1/4 cup diced red bell pepper
1/4 cup sliced green onions
2 tbsp. lime juice
2 tbsp. chopped fresh parsley
1 tbsp. brown sugar
1 tsp. Caribbean jerk seasoning
Directions

Prep: 30 minutes, Cook: 1½ hours, Serves: 8

1. Preheat oven to 350°F. Place turkey, skin side down, between 2 layers of plastic wrap and pound with a meat mallet or the bottom of a heavy skillet to flatten as thin as possible. Remove plastic and sprinkle on both sides with jerk seasoning.

2. Stir together all stuffing ingredients in a medium bowl; press onto the surface of turkey breast. Starting on the longer side, roll up tightly to enclose stuffing. Tie in 3 or 4 places with kitchen twine and place seam side down on a large baking sheet.

3. Bake for 1½ hours or until turkey reaches 165°F, tenting with foil if surface browns too quickly. Let stand for 10 minutes before removing twine and slicing.
