Gorgonzola Pancetta Mashers
Gorgonzola Pancetta Mashers
1 lb. small Yukon gold potatoes, quartered
1 lb. small red potatoes, quartered
1 (3- oz.) package pancetta (in our Deli), diced
3 cloves garlic, minced
1 cup cream or fat-free half & half
4 oz. Gorgonzola cheese (in our Deli), crumbled
2 tbsp. chopped fresh parsley
1 tsp. sea salt
freshly ground pepper to taste

Rich Gorgonzola cheese and salty pancetta give these mashed potatoes an Italian twist! Add additional pancetta for a truly decadent side dish.

Prep: 15 minutes, Cook: 16 minutes, Serves: 6

1. Place potatoes in a large pot fitted with a steamer basket; add 1 inch of water to pot. Cover and steam for 15 minutes or until potatoes are tender when pierced with a fork. Drain well, then return to pot and mash to your liking, chunky or smooth.

2. While potatoes are steaming, cook pancetta in a small skillet over medium heat until lightly browned, stirring occasionally. Stir in garlic and remove from heat.

3. Stir pancetta mixture and remaining ingredients into potatoes. Cook for a minute more or until hot.
