Sicilian Veggie Melt

Sicilian Veggie Melt
1/2 tbsp. extra virgin olive oil
1 cup chopped baby bella or crimini mushrooms
1/2 cup chopped onion
1 (10- oz.) Nob Hill Trading Co. Artisan Parmesan Italian Herb Ciabatta (in our Bakery)
2 tbsp. pesto
1/4 cup Nob Hill Trading Co. Roasted Peppers, sliced
2 tbsp. sliced ripe olives
1/2 cup shredded Rumiano Sicilian Jack Cheese (in our Deli)

Prep: 15 minutes, Cook: 15 minutes, Serves: 2

1. Preheat oven to 450°F. Heat oil in a medium skillet over medium-high heat. Add mushrooms and onion and cook for 10 minutes, stirring occasionally.

2. Cut bread in half lengthwise and spread pesto on bread top. Spoon on onion mixture, peppers and olives. Sprinkle cheese over bread bottom.

3. Place open faced on a baking sheet and cook for 5 minutes or until cheese is melted and filling is hot. Close sandwich and cut into 2 pieces. Recipe may be doubled.
