Walnut and Roasted Pepper Quesadillas

Walnut and Roasted Pepper Quesadillas
1/2 cup coarsely chopped Nob Hill Trading Co. Roasted Peppers (including some garlic cloves from jar)
1/2 cup chopped walnuts, toasted
1/4 cup snipped fresh basil
1 (2.2- oz.) can sliced ripe olives, drained
1½ cups Raley's Shredded Italian Blend Cheese
4 medium-size multi-grain tortillas, divided
Nonstick cooking spray
Warm marinara sauce (optional)

Prep: 20 minutes, Cook: 10 minutes, Serves: 4

1. Stir together peppers, walnuts, basil and olives in a medium bowl.

2. Sprinkle equal amounts of cheese on 2 tortillas. Top with equal amounts of pepper mixture and top with remaining tortillas.

3. Coat on both sides with cooking spray and cook in a large skillet over medium heat for 5 minutes on each side or until cheese is melted and tortilla is crisp. Cut into wedges and serve with marinara sauce, if you like.
