Jalapeño Barbecue Ribs

Jalapeño Barbecue Ribs
1 rack St. Louis Style pork ribs

Chili Rub:
1½ tsp. paprika
1½ tsp. onion powder
1½ tsp. garlic powder
1½ tsp. ancho chili powder
1½ tsp. dried cilantro leaves
3/4 tsp. ground cumin
3/4 tsp. kosher salt

Jalapeño Barbecue Sauce:
1 cup prepared barbecue sauce
1/4 cup minced pickled jalapeño peppers plus 1/4 cup juice from jar

Prep: 20 minutes, Cook: 1 hour, 45 minutes, Serves: 6

1. Preheat oven to 400°F and place ribs in a large shallow pan. Stir together all rub ingredients in a small bowl and spread on top and sides of ribs. Add 1/2 inch of water to pan and seal tightly with heavy-duty foil. Bake for 1½ hours.

2. While ribs are cooking, stir together barbecue sauce, peppers and jalapeño juice in a small saucepan. Simmer over low heat for 10 minutes.

3. Carefully remove cover from ribs. Cook on a well-oiled grill over medium heat for 10 to 15 minutes or until ribs are lightly charred, turning and brushing with some of the barbecue sauce occasionally. Serve with any remaining sauce
