Spiced Pork and  Dried Fruit Stew

Spiced Pork and Dried Fruit Stew
1 tbsp. olive oil
2 lbs. Raley's pork sirloin, cut into 1½-inch cubes
1 large onion, coarsely chopped
2 cups Raley's Chicken Stock
1 cup Raley's Chili Spiced Dried Fruit (with the other Raley's Fruit and Nut Trail and Snack Mixes), chopped
3/4 cup Goya Manzanilla Olives, halved
1/3 cup tomato paste
1/2 tsp. chili powder
1/2 tsp. ground cumin
2 (15- oz.) cans black beans, rinsed and drained
1 (4- oz.) can Raley's Diced Green Chiles

Prep: 15 minutes, Cook: 2 hours, Serves: 4 to 6

1. Heat oil in a large pot over medium-high heat. Add pork and cook until browned on all sides.

2. Add remaining ingredients to pot and bring to a boil. Reduce heat and simmer, covered, for 1½ hours or until meat is very tender.

3. Remove cover and cook for a few minutes more to thicken slightly.
