Warm Quinoa with Yams and Avocado
Warm Quinoa with Yams and Avocado
Ingredients
1 cup quinoa
1¾ cups vegetable stock divided
1¼ tsp. chili powder
3/4 tsp. ground cumin
1 tbsp. olive oil
1 cup 1/2 -inch diced yams
1 cup 1/2 -inch diced onion
1 firm but ripe avocado peeled, pitted and cubed
Chopped fresh cilantro to taste (optional)
Directions

Prep: 10 minutes, Cook: about 20 minutes
Stand: 10 minutes, Serves: 4

1. Place quinoa in a fine mesh sieve and rinse; drain well. Place in a medium saucepan with 1¼ cups stock, chili powder and cumin. Bring to a boil; reduce heat and simmer, covered, for 12 minutes. Remove from heat and let stand for 10 minutes, then fluff with a fork.

2. Heat oil in a large skillet over medium heat. Add yams and onion and cook for 10 minutes or until soft and lightly browned, stirring frequently. Stir into warm quinoa with remaining stock, then lightly stir in avocado. Sprinkle with cilantro, if you like.
