Shrimp Salad Tostadas

Shrimp Salad Tostadas
1 tbsp. extra virgin olive oil
1 tbsp. chopped pickled jalapeño peppers
1 tbsp. juice from jalapeno jar
1 tbsp. lime juice
1/4 tsp. garlic salt
1/2 lb. small to medium cooked shrimp
1/4 cup Raley's Fresh Pico de Gallo
1/4 cup mild red salsa
1/4 cup canned black beans
1/4 cup corn kernels
1/2 ripe avocado, mashed
2 tostada shells
1½ cups sliced romaine lettuce

Prep: 15 minutes, Serves: 2

1. Stir together oil, jalapeño peppers, pepper juice, lime juice and garlic salt in a medium bowl. Stir in shrimp, pico de gallo, salsa, black beans and corn.

2. Spread avocado onto tostada shells and top with lettuce. Pile equal amounts of shrimp mixture in the center. Serve immediately. Recipe may be doubled.
