Caramel Apple Yams

Caramel Apple Yams
4 lbs. yams peeled and cut into 3/4-inch cubes
1/2 cup water
2 medium green apples, peeled, cored and cubed
1/2 cup undiluted apple juice concentrate
1/2 tsp. cinnamon
10 caramels
1 cup miniature marshmallows
1/4 cup chopped walnuts

Prep: 20 minutes, Cook/Stand: 1 hour, Serves: 10 to 12

1. Preheat oven to 400°F. Place yams and water in a 13 X 9-inch glass baking dish. Cover and microwave on HIGH for 10 minutes. Stir and cook for 5 minutes more, then stir in apples.

2. Meanwhile, cook juice concentrate, cinnamon and caramels in a small saucepan over low heat until caramels are melted. Lightly stir into yam mixture. Place in the oven and cook for 30 minutes or until apples are tender.

3. Sprinkle with marshmallows and walnuts and bake for 5 minutes more. Let stand for 10 minutes before serving.
