Maple Nut Stuffing Fritters
Maple Nut Stuffing Fritters
4 cups 1/2 -inch cubes Nob Hill Trading Co. Pugliese Bread (in our Bakery)
4 cups crumbled cornbread
2 tbsp. butter
1 large onion finely chopped
3 ribs celery finely chopped
2 cups chicken broth
1/2 cup finely chopped dried apples
1/2 cup finely chopped walnuts
1/4 cup maple syrup
1 tsp. dried rosemary
1 tsp. dried sage
Vegetable oil for frying

Prep: 20 minutes  Chill: 1 hour  Cook: 30 minutes total  Serves: 8 to 10

1. Preheat oven to 400°F. Place bread on a large baking sheet and cook for 15 minutes or until crisp, stirring once. Transfer to a large bowl.
2. Melt butter in a large skillet over medium heat. Add onion and cook for 10 minutes or until lightly browned, stirring frequently. Add celery and cook for 5 minutes more. Add vegetables and remaining ingredients except oil to bowl with bread and mix well. Refrigerate for at least 1 hour.
3. Using wet hands, shape mixture into 2-inch round patties, leaving edges uneven. Drop into very hot oil using a slotted spoon and cook for 1 to 2 minutes on each side or until golden brown. Drain well on paper towels. (May be prepared ahead and reheated in a 400°F oven.) Drizzle with additional maple syrup, if you like.
