Lightened Up Gingerbread
Lightened Up Gingerbread
Ingredients
2 cups flour
1/4 cup sugar
2 tsp. ground ginger
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. ground cloves
2/3 cup golden raisins
3 tbsp. hot water
3/4 cup molasses
3/4 cup buttermilk
1/4 cup butter, melted
1 egg
Directions

Using a golden raisin puree in place of some of the butter makes this cake light and tasty! 

Prep: 15 minutes, Cook: 35 to 40 minutes, Serves: 8

1. Preheat oven to 350°F and lightly butter a 9-inch baking dish.

2. Stir together dry ingredients in a large bowl.

3. Puree raisins and hot water in a small food processor or blender until smooth. Whisk together raisin puree, molasses, buttermilk, butter and egg, then stir into dry ingredients

4. Pour into baking dish and bake for 35 to 40 minutes or until a toothpick inserted into the center comes out clean.
