Gingerbread Bread Pudding
Gingerbread Bread Pudding
2/3 cup milk
2 tbsp. brown sugar
1 tbsp. melted butter
1/2 tsp. vanilla
1 egg
2 heaping cups 1/2-inch cubes Lightened Up Gingerbread (see separate recipe) lightly toasted
powdered sugar (optional topping)
whipped cream (optional topping)

Sprinkle with coarse sugar before baking for a bit of crunch.

Prep: 10 minutes, Stand: 15 minutes, Cook: 30 minutes Serves: 2

Preheat oven to 350°F. Whisk together 2/3 cup milk, 2 tbsp. brown sugar, 1 tbsp. melted butter, 1/2 tsp. vanilla and 1 egg in a medium bowl. Stir in 2 heaping cups lightly toasted 1/2-inch cubes Lightened Up Gingerbread (recipe above); let stand for 15 minutes. Spoon into two buttered 1-cup ramekins and bake for 30 minutes. Serve warm dusted with powdered sugar or with whipped cream or ice cream.
