Ginger Spiced  Caramel Nut Chews
Ginger Spiced Caramel Nut Chews
1 (10- oz.) bag bittersweet chocolate chips
1 (14- oz.) bag caramel candies
1/3 cup sweetened condensed milk
1 tbsp. + 1 tsp. Gingerbread Spice Mix (see separate recipe)
3/4 cup shelled pecans
3/4 cup shelled walnuts
3/4 cup salted cashews

Prep: 15 minutes, Cook: 15 minutes, Chill: 30 minutes, Serves: 24

1. Line an 8 or 9-inch square baking dish with plastic wrap. Place chocolate chips in a medium glass bowl. Microwave on HIGH for 2 minutes. Stir well, then microwave for 30 seconds more or until chips are fully melted. Pour into prepared pan and freeze for 10 minutes or until very firm.
2. Unwrap caramels and place in a medium saucepan with sweetened condensed milk. Cook over low heat for 15 minutes or until fully melted, stirring frequently.
3. Stir spice mix then nuts; let cool slightly. Spread over chocolate as evenly as possible. Lightly butter a piece of foil and press directly onto the surface to eliminate any gaps in caramel. Refrigerate until firm then cut into pieces. Best stored in the refrigerator.
