Gingerbread Scones
Gingerbread Scones
3 cups flour
1/4 cup brown sugar
4 tsp. Gingerbread Spice Mix (see recipe link in Directions below)
1 tbsp. baking powder
1/2 tsp. salt
1/2 cup cold butter cubed
1 cup whipping cream
1/4 cup finely chopped crystallized ginger

Prep: 15 minutes, Cook: 15 to 17 minutes, Makes: 16 scones

1. Preheat oven to 425°F and line a baking sheet with parchment paper. Stir together dry ingredients, including Gingerbread Spice Mix, in a large bowl; cut in butter with a pastry blender or fork until it’s in small pieces. Stir in cream and ginger until mixture forms a soft dough.

2. Knead several times on a lightly floured surface, then roll or pat into two 3/4-inch thick circles. Cut each circle into 8 wedges.

3. Place on prepared baking sheet and bake for 15 to 17 minutes or until lightly browned.
