Brandy Spiced Pecans

Brandy Spiced Pecans
3 tbsp. butter
1/2 cup brown sugar
2 tbsp. brandy
4 tsp. Gingerbread Spice Mix (separate recipe), divided
1 (10- oz.) bag Raley's Shelled Pecans
1/4 cup sugar

Gingerbread Spice Mix:
1/4 cup ground ginger
3 tbsp. cinnamon
2 tbsp. ground cloves
1 tsp. ground nutmeg

Use the recipe for Gingerbread Spice Mix below to season these sweet pecans.

Prep: 10 minutes, Cook: 35 minutes, Serves: 12

Preheat oven to 325°F and line a baking sheet with foil. Melt 3 tbsp. butter in a medium saucepan. Stir in 1/2 cup brown sugar, 2 tbsp. brandy and 3 tsp. Gingerbread Spice Mix. Cook for 1 minute, then stir in 1 (10-oz.) bag Raley’s Shelled Pecans. Spread on baking sheet in a single layer and cook for 20 to 25 minutes or until nuts are fragrant and lightly browned, stirring several times. Let cool slightly. Stir together 1/4 cup sugar and 1 tsp. Gingerbread Spice Mix. Sprinkle over nuts and toss well to coat. Let cool, then store in an airtight container. 

Gingerbread Spice Mix: Stir together all ingredients in a small bowl. Store in an airtight container or several small decorative jars with tight-fitting lids util ready to use. Recipe may be doubled or tripled.
