Gingerbread Pork Loin
Gingerbread Pork Loin
1 (3 to 3½ lb.) boneless Raley's Fresh All Natural Pork loin roast
Freshly ground sea salt and pepper to taste
1 tbsp. honey mustard
2 tsp. fresh thyme leaves
6 tbsp. finely crumbled Lightened Up Gingerbread (see recipe in Directions below)

Prep: 15 minutes, Cook: 1 hour, Serves: 6

1. Preheat oven to 350°F. Place pork in a shallow baking dish and season with salt and pepper.

2. Spread mustard over the top and sides, then press gingerbread crumbs into the surface.

3. Cook for 1 hour or until pork reaches 145°F internally. Let stand for 5 minutes before carving.
