Gingerbread Pancakes
Gingerbread Pancakes
Ingredients
2 cups Kodiak Flapjack Mix
1¼ cups (one 10- oz. bottle) sparkling apple cider
1/4 cup molasses
1 tsp. Gingerbread Spice Mix (recipe online)
1/4 cup batter for each pancake
Molasses Butter:
6 tbsp. butter softened
1 tbsp. molasses
1/4 tsp. Gingerbread Spice Mix
Directions

Prep: 10 minutes Cook: 15 minutes Serves: 4 to 6

Stir together 2 cups Kodiak Flapjack Mix, 1¼ cups (one 10-oz. bottle) sparkling apple cider, 1/4 cup molasses and 1 tsp. Gingerbread Spice Mix (on page 62) in a large bowl. Pour about 1/4 cup batter for each pancake into a lightly buttered, preheated skillet. Cook over medium heat for about 2 minutes, then turn and cook for 1 to 2 minutes more. Serve warm with Molasses Butter: Stir together 6 tbsp. softened butter, 1 tbsp. molasses and 1/4 tsp. Gingerbread Spice Mix in a small bowl.

*May substitute water, but the flavor and texture are best with sparkling cider.
