Gingerbread Pancakes

Gingerbread Pancakes
2 cups Kodiak Flapjack Mix
1ΒΌ cups (one 10-oz. bottle) sparkling apple cider
1/4 cup molasses
1 tsp. Gingerbread Spice Mix (see recipe link in Directions below)
Molasses Butter:
6 tbsp. butter softened
1 tbsp. molasses
1/4 tsp. Gingerbread Spice Mix (see recipe link in Directions below)

Prep: 10 minutes, Cook: 15 minutes, Serves: 4 to 6

1. Stir together flapjack mix, cider, molasses and 1 tsp. Gingerbread Spice Mix in a large bowl. Pour about 1/4 cup batter for each pancake into a lightly buttered, preheated skillet.

2. Cook over medium heat for about 2 minutes, then turn and cook for 1 to 2 minutes more.

3. Prepare Molasses Butter by combining softened butter, molasses and 1/4 tsp. Gingerbread Spice Mix in a small bowl. Serve with warm pancakes.

*May substitute water, but the flavor and texture are best with sparkling cider.
