Corned Beef Hash with Eggs
Corned Beef Hash with Eggs
Ingredients
1 tbsp. butter
1 tbsp. vegetable oil
2 cups 1/2 -inch pieces good quality frozen French fries, thawed
1 (5- oz.) package Raley's Yellow Onion Dice (in our Produce Dept.)
1 (1/2 -inch thick) slice Deli corned beef beef, cut into bite-size cubes
1 (5- oz.) container Raley's Tri Pepper Dice (in our Produce Dept.)
1/2 tsp. dried thyme
4 eggs, poached or fried
Directions

Prep: 10 minutes, Cook: about 20 minutes, Serves: 4

1. Melt butter with oil in a large skillet over medium heat. Add fries and onion and cook for 10 minutes, stirring frequently. Stir in corned beef, peppers and thyme; cook and stir for 5 minutes more.

2. Spoon onto 4 plates and top each serving with an egg.
