Vegetable Herb Gravy

Vegetable Herb Gravy
Ingredients
1 tbsp. organic extra virgin olive oil
1/2 cup diced peeled turnip
1/2 cup diced peeled parsnip
1/2 cup diced peeled onion
2 cups water
2 (1- oz.) packages Hain Vegetarian Chicken Flavored Gravy Mix
1/2 tsp. Original Spike Seasoning
1/2 tsp. soy sauce
1/2 tsp. dried sage
1/2 tsp. dried thyme
Freshly ground pepper to taste
Directions

Delicious over turkey, potatoes or use as the base for a soup or stew.

Prep: 20 minutes  Cook: 35 minutes  Serves: 6

1. Heat oil in a medium saucepan over medium heat. Add vegetables and cook for 25 minutes, stirring frequently, or until softened and lightly browned.
2. Stir in water and gravy mix and bring to a boil; reduce heat and simmer for 5 minutes.
3. Let cool slightly, then puree in a blender or food processor until smooth. Place back in saucepan with seasonings and simmer for 5 minutes more.
