Tuscan Roasted Cauliflower
Ingredients
1 head cauliflower
2 tbsp. olive oil
3/4 tsp. each: dried basil and garlic salt
1/4 cup Parmesan cheese shredded
2 tbsp. pine nuts
2 tbsp. California Sun-Dry Smoked Sun-Dried Tomatoes
Season to taste with freshly ground pepper
Directions

Preheat oven to 400°F. Cut 1 head cauliflower into 1-inch pieces. Place in a medium bowl with 2 tbsp. olive oil, 3/4 tsp. each: dried basil and garlic salt. Spread on a baking sheet and cook for 15 minutes. Toss with 1/4 cup shredded Parmesan cheese and 2 tbsp. each: pine nuts and minced California Sun-Dry Smoked Sun-Dried Tomatoes; cook for 5 minutes more. Season to taste with freshly ground pepper.

Makes 4 servings.
