Chipotle Cheese Polenta
Chipotle Cheese Polenta
4 cups chicken broth
1 cup polenta
1 (8- oz.) bag Mexican blend cheese shredded
1 (4- oz.) can green chiles diced
1 chipotle pepper plus 1 tsp. adobo sauce from can minced
1/3 cup green onions (green tops only) sliced
Prep: 15 minutes Cook: 20 minutes Makes: 48 appetizers 
Chill: at least 2 hours
1. Spray a 13x9-inch baking dish with nonstick cooking spray. Bring broth to a boil in a large saucepan; add polenta and cook for 10 to 15 minutes over low heat.
2. Stir in cheese, chiles, chipotle pepper, adobo sauce and green onions. Spread in prepared dish; chill for at least 2 hours. When firm, cut into 1-inch squares.
Tip: Doll it up by garnishing with guacamole, diced tomatoes and cilantro.

Made on 7/25/09 with Artzs. Good but should definitely heat it up in skillet - adds much more to flavor and is much better heated than cold. Liked it but problably wouldn't make again.
