1 lb. butter
2 cups sugar
3 ea egg yolks
2 tsp. vanilla
2-1/2 tsp. almond extract
4-1/2 cups flour

Prep time: 30 minutes Cook time: 15 minutes

Preheat oven to 350°F and lightly spray brioche pans with non-stick
cooking spray. Cream together butter and sugar. Add egg yolks,
vanilla, extracts and flour; stir to form a soft dough. Press walnut-sized
pieces of dough firmly into prepared molds. Place on a baking sheet;
bake for 15 minutes or until golden brown. Let cool for a few minutes,
then remove cookies from brioche pans. Repeat with remaining dough.

Makes 36 cookies.
