1½ cups water
1½ cups sugar
1/2 lemon seeded
1 cup honey
1 lb. walnuts
1/3 cup sugar
2 tsp. cinnamon
1/2 lb. filo dough thawed
1 cup butter melted

Prep: 30 minutes Cook: 1 hour Stand: 4 hours Makes: 24 servings

1. Bring water, 1 cups sugar and lemon to a boil in a large saucepan. Boil for 15 minutes, then let cool; discard lemon and stir in honey. Place walnuts, 1/3 cup sugar and cinnamon in a food processor. Using on and off pulses, finely chop walnuts. (They should almost be ground.)
2. Preheat oven to 350°F and unroll filo dough; cover with a damp cloth. Brush a 13x9-inch baking dish with butter. Place 1 sheet of dough in the bottom of the pan and brush with butter. Repeat with 6 more sheets dough, brushing with butter between each sheet.
3. Spread half the filling over the dough and repeat with 6 more sheets of dough and melted butter. Spread with remaining filling and top with remaining dough and butter. Using a small sharp knife, cut through the top layer of dough and cut a diamond pattern into the surface.
4. Bake for 45 minutes; remove from oven and pour syrup over the top. Using the diamond pattern as a guide, cut all the way through the layers. Let stand for at least 4 hours.
