Cioppino
Cioppino
Ingredients
2 (32- oz.) jars Raley's Cioppino Sauce
1 cup white wine
1 or 2 cooked Dungeness crabs cleaned and sectioned (our meat dept. will do this for you!)
9 fresh littleneck clams scrubbed
9 fresh mussels scrubbed
1 lb. Pacific Red Snapper fillets cut into 2 -inch pieces
1 lb. prawns, peeled and deveined
1/2 lb. bay scallops
2 tbsp. lemon juice
Directions
Bring cioppino sauce and wine to a boil in a large stockpot. Add crab; cover and simmer for 15 minutes. Add remaining seafood, tucking under crab so that it is in the broth; bring to a boil again and simmer 5 to 10 minutes or until prawns are pink and clams and mussels are open. (Discard any that do not open.) Stir in lemon juice. Serve with lots of crusty French bread such as our Sweet and Sourdough Baguettes.

Makes 4 generous servings.

This was really good! Generally I fear and avoid premade sauces or soups, but was in a bind this year and trusted Raley's. The cioppino came out very good; things can be so hectic this time of year, I will probably do the same next time. Happy New Year!

I've always made my own cioppino sauce. Never again! Raley's sauce was excellent and my husband couldn't tell the difference, and really, neither could I except for all the extra time I had to visit with everyone

Regarding the supply of crabs: We are sorry our inventory was short. Due to bad weather off of the Oregon coast, the crab fishermen were unable to go out and fish, so there were no crabs available. Our supplier was not at fault, the crabs have to be caught before they can be supplied to us.

I have to say, this is just an absolutely great tasting sauce. Served it for the 1st time and followed the recipe as stated. Won't be afraid to serve to guests next time and there will be a next time!!!!

Your cioppino sauce is great. Does it come in any larger size containers? The recipe you have is a good starting place. I spice it up a little with fennel and red pepper flakes and I add some additional fish stock.
