Basil Linguine with Tomatoes and Spinach

Basil Linguine with Tomatoes and Spinach
3 cups chicken stock or
vegetable stock
1/2 tsp. garlic salt
1 (9- oz.) package fresh linguine
3 cups lightly packed fresh spinach, roughly chopped
1 cup halved small cherry tomatoes
1/4 cup shredded Parmesan cheese
3 tbsp. snipped fresh basil

Prep: 10 minutes Cook: 10 minutes, Serves: 4

1. Bring stock and garlic salt to a boil in a large skillet. Add linguine; cook over medium-high heat for 5 to 7 minutes or until most of the liquid has been absorbed.

2. Stir in spinach and tomatoes; cook and stir for 1 minute more. Add cheese and basil and toss well with 2 forks to mix.

Health tip! With no butter or oil, this dish is low in fat.

Wine Suggestion
Pinot Grigio: This fresh, crisp white wine makes the perfect counterpoint to this pasta.
