Ingredients
1 (15- oz.) can Eden Organic Cannellini Beans rinsed and drained
1 cup Nob Hill Trading Co. Roasted Red Peppers
2 organic green onions sliced
1/4 cup fresh basil leaves packed
2 tbsp. Parmesan cheese shredded
Garlic salt and pepper to taste
Assorted vegetables cut
Mary’s Gone Crackers Organic Wheat Free, Gluten Free Caraway Crackers
Directions
Prep time: 10 minutes, Chill time: at least 1 hour and up to 1 week

Combine beans, peppers and onions in a food processor or blender. Process until smooth. Add basil and cheese; pulse until finely chopped. Season with garlic salt and pepper. Cover and chill for at least 1 hour. Serve with cut vegetables and crackers.

Makes 2 cups.

Tip!
To reduce sodium in the stuffing, use Imagine Chicken Broth.
