Scrambled Baja Eggs

Scrambled Baja Eggs
1 dozen eggs
1-1/2 tsp. Mexican seasoning blend
1 tbsp. butter
1/4 cup sliced green onions
3/4 cup fresh salsa
1 cup shredded Mexican blend cheese
1/2 cup coarsely crushed tortilla chips
diced avocado (optional)

Prep: 10 minutes, Cook: 10 minutes, Serves: 6

1. Beat together eggs and Mexican seasoning. Cook in butter in a large skillet over medium heat for about 5 minutes, stirring frequently.

2. Remove from heat and top with onions, salsa, cheese and chips. Place under the broiler for just a few minutes until cheese is melted and chips are lightly browned. Serve with avocado, if you like.

Recipe tip! We like pepper flavored chips for the topping.

Serving tip! Serve with a crisp Caesar salad.
