Sicilian Chicken and Bean Soup

Sicilian Chicken and Bean Soup
1 (32- oz.) container Kitchen Basics Chicken Stock
1 (15- oz.) container Buitoni Tomato
Herb Parmesan Sauce (from the refrigerated pasta section)
1 (15- oz.) can small white beans rinsed and drained
2/3 cup each: carrots and celery chopped
2 cups rotisserie chicken meat shredded
2 cups fresh spinach coarsely chopped
Garlic salt and pepper to taste freshly ground
Prep time: 10 minutes, Cook time: 20 minutes

Combine stock, tomato sauce and beans in a medium saucepan and place over medium-high heat. While these are brought to a boil, chop carrots and celery and add to the pan. Cover and simmer over low heat for 15 minutes. Stir in chicken and spinach and cook for just a few minutes more to heat through. Season to taste and serve with European Style Asiago Cheese Cracked Pepper Bread.

Makes 4 (2-cup) servings.

Health tip!
To reduce the sodium, substitute no-salt chicken broth from our Natural Foods Department.
