Cranberry Chicken Melts
Cranberry Chicken Melts
1 1/3 cups rotisserie chicken meat shredded
1/2 tsp. Herbes de Provence
1/2 cup whole berry cranberry sauce
4 (3 -inch) sections French bread cut in half horizontally
4 oz. Brie thinly sliced
Prep time: 15 minutes, Cook time: 15 minutes

Preheat oven to 400°F. Toss chicken and herbs together in a medium bowl. Mash cranberry sauce with a fork to break up cranberries and spread on the bottom half of each bread section. Top with chicken and Brie. Close sandwiches and place on a baking sheet. Loosely tent with foil and bake for about 15 minutes or until bread is toasty and cheese is melted.

Makes 4 sandwiches.
