Old World Mashed Potatoes

Old World Mashed Potatoes
Ingredients
3/4 lb. russet potatoes washed and cubed
2 tbsp. butter
1/2 cup shallots thinly sliced
1/2 cup fennel thinly sliced and coarsely chopped
1/2 cup light sour cream
2 tbsp. shredded Parmesan cheese
1/2 tsp. garlic salt
pepper to taste Freshly ground
fresh chives and basil (optional) Sliced
Directions
Prep time: 15 minutes, Cook time: 18 minutes

Cook potatoes in boiling water for 15 minutes or until tender when pierced with a fork; drain well and mash. While potatoes are cooking, melt butter in a small skillet. Add shallots and fennel; cook over low heat for 12 to 15 minutes or until golden brown and very soft. Stir into mashed potatoes with sour cream, cheese, salt and pepper. Cook for a few minutes more until very hot; top with chives and basil, if you like.

Makes 2 servings.

Tip! You’ll add to the nutritional value of the mashed potatoes by keeping the peel on. Double the recipe if you want leftovers!
