Marinated Radish Salad

Marinated Radish Salad
2 tbsp. sesame oil
2 tbsp. rice vinegar
2 tbsp. Kikkoman Aji-Mirin (sweet cooking rice seasoning)
1 tsp. grated fresh ginger
1/2 tsp. minced fresh garlic
1/2 tsp. salt or to taste
2 cups daikon radish, peeled and thinly
1 cup radishes, thinly sliced
torn fresh cilantro leaves (optional garnish)
green onion tops (optional garnish), thinly sliced

The largest radish you’ll ever see is the daikon. Its name literally means “large root.”

Prep: 15 minutes, Chill: 1 hour, Serves: 4

1. Whisk together sesame oil, vinegar, mirin, ginger, garlic and salt in a medium bowl. Add radishes and stir to coat. Cover and refrigerate for 1 hour.

2. Garnish with cilantro and green onions, if you like.
