Wheat Berry and Lentil Stew
Ingredients
1 tbsp. olive oil
1 cup onion chopped
1 (32- oz.) container vegetable broth
1 cup yam peeled, diced
3/4 cup Einkorn Wheat Berries
1/2 cup celery coarsely chopped
1/2 cup carrot coarsely chopped
1/4 cup Tru Roots Organic Sprouted Lentils
2 tsp. ground turmeric
1/2 tsp. sea salt
1/2 tsp. ground cumin
1/2 tsp. ground coriander
2 cloves garlic minced
Directions

Einkorn Wheat Berries and Tru Roots Lentils both cook much faster than their traditional versions. This creamy good-for-you stew is ready in under an hour. Who says eating healthy is boring? This recipe got rave reviews from our tasters!

Prep: 15 minutes  Cook: 35 minutes  Serves: 6


1. Heat olive oil in a large saucepan over medium-high heat. Add onion and cook for 5 minutes.
2. Stir in remaining ingredients and bring to a boil; reduce heat and simmer, covered, for 30 minutes.
