Chorizo Smashed Potatoes
Chorizo Smashed Potatoes
1 lb. russet potatoes
2 tbsp vegetable oil
1 white onion, thinly sliced
1/2 cup Soyrizo Meatless Soy Chorizo
1/2 cup sliced green onions
Garlic salt to taste
Shredded pepper Jack cheese (optional)

In any form, potatoes have to be the most popular root vegetable. Serve as a side dish or with fried eggs.

Prep: 10 minutes, Cook: 20 minutes, Serves: 4

1. Microwave potatoes in a large covered bowl on HIGH for 10 minutes. Crush with a potato masher or fork.

2. Heat oil in a large skillet over medium-high heat. Add potatoes and onion and cook for 5 minutes, stirring frequently. Stir in Soyrizo and sliced green onions and cook for 5 minutes more.

3. Season to taste with garlic salt and top with shredded pepper Jack cheese, if you like.
