Forbidden Rice with Parsnips, Turnips and Yams

Forbidden Rice with Parsnips, Turnips and Yams
Ingredients
1¾ cups vegetable stock
1 cup Lotus Foods Forbidden Rice
2 tbsp. butter (or olive oil)
1/2 cup peeled and diced parsnips
1/2 cup peeled and diced turnips
1/2 cup peeled and diced yams
1/2 cup peeled and diced shallots
1/2 tsp. dried thyme
Freshly ground sea salt and pepper to taste
Directions

Prep: 20 minutes, Cook: 45 minutes, Serves: 4 to 6

1. Bring stock to a boil in a medium saucepan. Add rice and return to a boil. Reduce heat and simmer, covered, for 30 minutes.

2. While rice is cooking, melt butter in a large skillet. Add root vegetables and thyme and cook over medium heat for 15 minutes or until cooked through, stirring frequently.

3. Stir vegetables into rice and season with salt and pepper.
