Stir-Fried Bok Choy

2 large (or 3 small) baby bok choy
1 tbsp. peanut oil
1 tsp. minced ginger
2 cloves garlic, minced
2 tbsp. soy sauce
1 tbsp. Grama's Sweet Chilli Sauce

Prep: 10 minutes, Cook: 5 minutes, Serves: 6

Cut base off 2 large or 3 small baby bok choy and separate leaves. Heat 1 tbsp. peanut oil in a large skillet over medium heat. Add 1 tsp. minced ginger and 2 cloves minced garlic. Cook and stir for 1 minute, then stir in 2 tbsp. soy sauce and 1 tbsp. Grama’s Sweet Chilli Sauce. When very hot, stir in bok choy and stir-fry for 2 minutes or until leaves are wilted.
