Lemon Vermicelli

Lemon Vermicelli
1/4 lb. vermicelli pasta
1/2 cup chicken stock
1/3 cup white wine
2 tbsp. lemon juice
1 tbsp. butter
1 clove garlic, minced
2 tbsp. Parmigiano-Reggiano or Grana Padano cheese (in our Deli), freshly grated
Isle of Capri Sea Salt and freshly ground pepper to taste
Snipped fresh basil

Microplane citrus zesters can do double duty – use to grate small amounts of Parmesan.

Prep: 10 minutes, Cook: 15 minutes, Serves: 2

1. Cook pasta according to package directions; drain well.

2. Place back in pan and add stock, wine, lemon juice, butter and garlic. Cook over medium heat for 5 minutes or until excess liquid has cooked off. Stir in cheese, then season with salt, pepper and basil.
