Caramelized Fennel and Onion Potatoes
Caramelized Fennel and Onion Potatoes
Ingredients
1 tbsp. butter
1/2 cup fennel, thinly sliced and coarsely chopped
1/2 cup onion, quartered and thinly sliced
3/4 cup vegetable broth
3/4 lb. red or Yukon gold potatoes, cubed
2 tbsp. mascarpone cheese (in our Deli)
Freshly ground sea salt and pepper to taste
Directions

Prep: 10 minutes, Cook: 20 minutes, Serves: 2

1. Melt butter in a medium skillet over medium heat. Add fennel and onion; cook for 15 minutes, stirring frequently.

2. Place broth and potatoes in a medium saucepan. Cook over medium heat until liquid starts to boil; reduce heat and simmer, covered, for 15 minutes or until vegetables are tender.

3. Mash to your liking, chunky or smooth, then stir in mascarpone, caramelized vegetables, salt and pepper.
