Creamy Ham and Bean Soup
Ingredients
1 cup each: chopped carrots, celery and onion
1 tbsp butter
2 cups leftover ham diced
3 (15-oz.) cans cannellini beans rinsed and drained coarsely mashed
1 (48- oz.) container chicken broth
1 tsp dried thyme
Directions

Prep: 15 minutes, Cook: 40 minutes, Serves: 6 to 8

Cook 1 cup each: chopped carrots, celery and onion in 1 tbsp. butter for 10 minutes in a large pot. Stir in 2 cups diced leftover ham, 3 (15-oz.) cans rinsed and drained coarsely mashed cannellini beans, 1 (48-oz.) container chicken broth and 1 tsp. dried thyme. Bring to a boil; reduce heat and simmer, covered, for 30 minutes.
