Ham and Egg Tacos
Ham and Egg Tacos
1/2 cup leftover ham diced
1/4 cup onion minced
1 tbsp butter
4 eggs
1 tsp Mexican seasoning
1/2 tsp garlic salt
8 good quality corn tortillas
1/2 cup refried beans
1/2 cup pepper Jack cheese shredded

Prep: 10 minutes Cook: 15 minutes Serves: 4

Cook 1/2 cup diced leftover ham and 1/4 cup minced onion in 1 tbsp. butter for 5 minutes in a medium skillet. Beat 4 eggs with 1 tsp. Mexican seasoning and 1/2 tsp. garlic salt and add to skillet. Cook and
stir for 5 minutes more or until eggs are set. Top 8 good quality corn tortillas with 1/2 cup refried beans and 1/2 cup shredded pepper Jack cheese. Microwave in batches to warm. Fill with egg mixture and top with cilantro, salsa and avocado.
