Whisky Oat Crackers
Whisky Oat Crackers
1½ cups McCann's Instant Irish Oats
1½ cups flour
1 tsp. sea salt
1/2 tsp. baking powder
1/2 tsp. coarse pepper
1 (8- oz.) package Kerrygold Pure Irish Butter
3 tbsp. Jameson or Bushmills Irish Whiskey

Prep: 20 minutes, Cook: 15 minutes, Serves: 12

1. Preheat oven to 375°F and line 2 baking sheets with parchment paper. Stir together oats, flour, salt, baking powder and pepper in a large bowl. Cut in butter with a pastry blender or a fork, then stir in whiskey to make a soft dough. (Dough may be wrapped tightly and refrigerated at this point for up to a week.)

2. Roll out dough on a lightly floured board until very thin. Cut into 2-inch squares or use a round cutter. Place on prepared baking sheets and cook for 15 minutes or until crackers are lightly browned. 

Great served with our Irish Cheese Spread.
