Butternut Squash, Bacon  and Havarti Sandwiches

Butternut Squash, Bacon and Havarti Sandwiches
Ingredients
8 (1/4-inch thick) butternut squash slices, peeled (cut from the narrow, stem end)
Olive oil cooking spray
2 slices Havarti cheese, halved
2 tsp. minced Christopher Ranch Roasted Garlic
2 tbsp. snipped fresh basil
8 slices Nob Hill Trading Co. Whole Grain European Loaf (in our Bakery)
4 tsp. real bacon pieces
Directions

Pairs perfectly with our Nob Hill Trading Co. All-Natural Slow Roasted Butternut Squash Soup from our Deli. Drizzle squash with a bit of balsamic vinegar for extra flavor.

Prep: 15 minutes, Cook: 15 minutes, Serves: 4

1. Coat squash with cooking spray and place in a large skillet over medium-high heat. Tent with foil and cook for 5 minutes. Turn and top with cheese, bacon and garlic; replace foil and cook for 5 minutes more.

2. Spoon onto 4 slices of bread and top with basil and remaining bread. Coat with cooking spray and cook in a large skillet over medium-high heat for 3 minutes on each side or until bread is toasted.
