Veggie Taquitos

Veggie Taquitos
4 fajita size flour tortillas
1/4 cup Soyrizo Meatless Soy Chorizo
1/2 cup Raley's Fresh Pico de Gallo
2 to 4 tbsp. chopped pickled jalapeño peppers
1/2 cup crumbled queso fresco cheese
Olive oil cooking spray or olive oil

Pair with Nob Hill Trading Co. All-Natural Quinoa & Bean Chili from our Deli. Dress up taquitos with salsa, sour cream and guacamole.

Prep: 15 minutes, Cook: 15 minutes, Serves: 4

1. Preheat oven to 425°F and line a baking sheet with foil.

2. Lay tortillas on a board and spread equal amounts of chorizo down the center of each. Sprinkle with pico de gallo, peppers and cheese. Roll up tightly and secure each with a toothpick.

3. Coat liberally on all sides with cooking spray and transfer to a baking sheet. Cook for 15 minutes, spraying once more halfway though cooking.
