Curried Butternut Squash and Apple Soup
Curried Butternut Squash and Apple Soup
Ingredients
1 green apple peeled and chopped
1 tbsp honey
1 tsp curry powder
1/2 cup vegetable broth
1 (16- oz.) container Nob Hill Trading Co. All- Natural Slow-Roasted Butternut Squash Soup (in our Deli)
sour cream or plain yogurt
pistachio kernels chopped
Directions

Cook 1 peeled and chopped green apple, 1 tbsp. honey and 1 tsp. curry powder in 1/2 cup vegetable broth for 5 minutes or until tender in a medium covered saucepan. Puree with 1 (16-oz.) container Nob Hill Trading Co. All-Natural Slow-Roasted Butternut Squash Soup (in our Deli) in a blender or food processor and return to pan. Simmer, covered, for 5 minutes, then ladle into bowls. Top each with a spoonful of light sour cream or plain yogurt and chopped pistachio kernels.

Makes 3 to 4 servings.
