Pasta with Sun-Dried Tomatoes, Eggplant and Chard

Pasta with Sun-Dried Tomatoes, Eggplant and Chard
Ingredients
6 oz. (1/2 box) Jovial Spaghetti
2 cups eggplant, peeled, diced
1 cup shallots, sliced
2 tbsp. olive oil
6 cups red Swiss chard, coarsely chopped
1 cup chicken stock
1/4 cup California Sun-Dry Smoked Sun-Dried Tomatoes, chopped
1 tsp. dried basil
1/2 tsp. garlic salt
1/2 cup shredded Grana Padano or Parmesan cheese (in our Deli)
Directions

Prep: 15 minutes, Cook: 8 to 10 minutes, Serves: 6

1. Cook spaghetti according to package directions; drain well.

2. While pasta is cooking, sauté eggplant and shallots in olive oil over medium heat for 10 minutes, stirring frequently. Stir in chard, chicken stock, tomatoes, dried basil and garlic salt. Cook until chard is wilted.

3. Toss with pasta and cheese.
