Pasta with Sun-Dried Tomatoes, Eggplant and Chard
Pasta with Sun-Dried Tomatoes, Eggplant and Chard
Ingredients
6 oz. (1/2 box) Jovial Spaghetti
2 cups eggplant peeled, diced
1 cup shallots sliced
2 tbsp. olive oil
6 cups red Swiss chard coarsely chopped
1 cup chicken stock
1/4 cup California Sun-Dry Smoked Sun-Dried Tomatoes chopped
1 tsp. dried basil
1/2 tsp. garlic salt
1/2 cup Grana Padano or Parmesan cheese (in our Deli) shredded
Directions

Cook 6 oz. (1/2 box) Jovial Spaghetti according to package directions; drain well. While pasta is cooking, sauté 2 cups peeled, diced eggplant and 1 cup sliced shallots in 2 tbsp. olive oil over medium heat for 10 minutes, stirring frequently. Stir in 6 cups coarsely chopped red Swiss chard, 1 cup chicken stock, 1/4 cup chopped California Sun-Dry Smoked Sun-Dried Tomatoes, 1 tsp. dried basil and 1/2 tsp. garlic salt. Cook until chard is wilted. Toss with 1/2 cup shredded Grana Padano or Parmesan cheese (in our Deli).

Makes 6 servings.
