Turkey Club Sandwiches
Ingredients
4 inch pieces Old World Style Extra Sourdough Baguette
4 tbsp. extra virgin olive oil
1 1/2 tsp. garlic powder
2 tbsp. balsamic vinegar
Salt and pepper to taste
2 cups spring mix or other washed and torn salad greens
12 oz. smoked turkey
6 strips bacon
8 slices tomato
1/4 (5 oz.) wedge Parmesan cheese
Directions
Prep time: 20 minutes

Cut each piece of bread lengthwise into 3 pieces. Brush with 1 tbsp. olive oil and sprinkle with garlic powder. Broil until very lightly browned; let cool. Meanwhile, combine remaining olive oil with balsamic vinegar; stir well with a fork and season to taste with salt and pepper. Add lettuce and toss to coat.

To assemble sandwiches, place equal amounts of turkey on the bottom pieces of bread. Top with bacon slices. Place middle piece of bread over bacon, then top with lettuce and tomato and drizzle with any remaining oil and vinegar. With a vegetable peeler, shave long pieces of Parmesan cheese; place on top of tomato and finish with the last pieces of bread. Secure each sandwich with a long toothpick.

Makes 4 servings.
