Fire Roasted Tomato and Mixed Bean Soup
Fire Roasted Tomato and Mixed Bean Soup
1 cup Eden Organic Cannellini Beans
1 cup Eden Organic Black Beans
1 (32- oz.) container Imagine Chicken or Vegetable Broth
2 cups Muir Glen Organic Sun Dried Tomato Pasta Sauce
1 cup chopped onion
1 cup sliced carrot
2 tsp. basil
3 cups chopped organic spinach
Freshly ground pepper
Prep time: 10 minutes, Cook time: 1 hour

Rinse beans and drain well. Combine all ingredients
except spinach and pepper in a medium saucepan and
bring to a boil. Reduce heat and simmer, covered, for 1
hour. Stir in spinach and cook for a few minutes more.
Season to taste with pepper.

Makes 6 servings.
